Also known as Japanese Honey Mushrooms, Hon Shimeji are small, cloudlike clusters of button-capped Beech mushrooms with a savory, nutty flavor and an umami undertone reminiscent of fresh red shellfish. Although unpleasantly pungent and tricky to digest when raw, cooking coaxes out these rich flavors, with a texture that can morph from crunchy to buttery soft depending on how they’re prepared.

Notoriously difficult to cultivate, only a few operations around the world have managed to effectively recreate the conditions required to produce healthy, delicious Hon Shimeji. This selection is sourced from extremely principled partners in China, who we believe produce the finest examples of cultivated White Beech mushrooms anywhere in the world. What results are these delightful, whimsical orbs, wonderfully suited to a wide range of recipes and preparations.
